OH HAAAAY!! I wish you could know how many different workouts, recipes, thoughts I wanted to share with you this week. Seemed like everything I did was “good material” for Chasing Helen. The problem is, I have not stopped long enough to write any of it down.
But tonight, it all came together. You know those Thursday nights when you open the fridge to find several random ingredients left that you didn’t quite finish up during the week? Yep. I threw a bunch of veggies and a little fruit together and, voila! I made one of my favorite salads of all time.
Plus, I’ll share an impromptu, really fun workout I filmed earlier this week with my twin friend, Bethany Mohr, in front of an old warehouse downtown. Because, Goldsboro.
And, to top it all off, I stumbled across a motivational quote to get you pumped about chasing down your summer goals. After all, this weekend officially sets summer into motion.
BOOM. Let’s do this.
1. Thursday Night Eat What You Got Salad
Of course, the point of this salad is that I used what I had left in the fridge. But honestly, I might buy these specific ingredients again to make this very salad. It knocked my socks off. The bitter arugula and radishes with the salty pumpkin seeds and sweet strawberries made a great combo. Add mint and avocado to any salad and it’s a true winner. The scallions and kale were on their last leg, so I threw them in for good measure.
Like a good Lebanese granddaughter, I didn’t really measure any of the ingredients – not even the olive oil and vinegar. Just try to make the ingredients proportional, and don’t drown your salad in olive oil. You got this.
2. Two Brunettes are Better than One, Workout Video
I taught a small but mighty boot camp class on Monday night at Brew Works. My girl, Bethany is very loyal to this class. She brings her three year old, Brady and sets him up with headphones and the ipad, while we crush burpees and bear planks. Brady occasionally glances up and looks at us like we’re all crazy. He might have something there.
After our class, I grabbed Bethany for a little bonus round, and here’s what came of it:
Don’t we look like twins?! Or at least sisters. Okay, here is the breakdown of the workout:
- Plank + alternating toe touch (x10)
- Bear Plank + alt shoulder tap (x10)
- Alt squat punches (x15)
- Alt climbing push ups (x10)
- Alt lunge jumps (x15)
3. You Can, You Will, Conquer Your Summer Goals!
I love Brian Andreas quotes, but they’re deep, and I don’t always get them. Most of them don’t really go with the whole fitness, motivation theme. This is one of my favorites. I encourage you to read it a couple times over with current goals in mind:
That’s right. In this short time, you have so much to accomplish. What drives you? What makes your blood sing? What makes you feel eager to get up in the morning and tackle the day, the week, the year? There should be a voice in your head that says “I can, I will.” If you don’t hear it, start listening a little closer, a little better. In this short time, sing your song. Chase your goal. Why? Because you CAN!
